Henny Penny Open Fryers – FAQs

What is an open fryer?

An open fryer is a deep fryer in which oil is exposed to the air, unlike pressure fryers, which use a sealed chamber.

Henny Penny open fryers are ideal for fries, chicken tenders, fish, and other crispy fried foods.

What’s the difference between an open fryer and a pressure fryer?
  • Open fryers cook at normal atmospheric pressure, making them ideal for crispy and crunchy foods.
  • Pressure fryers cook under pressure, which locks in moisture and is better for juicier products like bone-in chicken.
How much does a Henny Penny open fryer cost?

Pricing varies depending on size, features, and configuration.

Entry-level models start around $13,000 CAD, while high-capacity, fully loaded units can range up to $66,000 CAD.

Our DSL sales team will work closely with you to recommend the right fryer solution that fits your current operation and future growth.

What industries use open fryers?

Henny Penny open fryers are widely used in quick-service restaurants (QSRs), convenience stores, full-service restaurants, grocery delis, and hotels.

What type of oil (shortening) should I use in an open fryer?

You can use any liquid or solid shortening in Henny Penny fryers.

*If using solid shortening, it needs to be melted down before putting it in the fryer. Solid shortening is not recommended for Evolution Elite Open Fryers or F5 Open Fryers as it won’t work with the automatic oil top-off function.

How much oil does a Henny Penny open fryer use?

Oil capacity varies by model, but most Henny Penny fryers hold 30-130 lbs of oil per vat.

  • Evolution Elite – 30 lbs oil per vat
  • 320 series – 65 lbs oil per vat
  • 340 series – 90 lbs oil per vat
  • Velocity Open Fryer – 130 lbs oil per vat

Gas or Electric?

Henny Penny open fryers come in both gas and electric models:

  • Gas fryers heat up quickly and work well in kitchens with existing gas lines. Henny Penny offers both natural gas and liquid propane options.
  • Electric fryers offer better heat retention and efficiency in some locations.
Can I get liquid propane (LP)?

Yes! Henny Penny gas fryers can be configured for natural gas or liquid propane (LP). DSL is here to help—our team will ensure your fryer is properly configured for your operation’s needs.

How do you filter the oil?

All Henny Penny fryers come standard with built in filtration systems!

The built-in SmartFilter® system automatically drains, filters, and returns the oil in under 4 minutes. This reduces downtime and ensures consistent food quality.

How often do you have to change the oil?

With daily filtration, you can extend oil life significantly. Depending on food volume and type, oil typically needs changing every 3 to 7 days, but high-efficiency Henny Penny fryers can stretch that further with proper filtering and oil management it can triple the oil life.

Does it have bulk oil disposal?

Yes, optional oil disposal plumbing and oil fill plumbing is available. DSL is here to help—our team will ensure your fryer is properly configured for your operation’s needs.

Henny Penny fryers work seamlessly with bulk oil management systems like Frontline International, allowing you to pump out used oil safely and efficiently. This reduces manual handling, improves kitchen safety, and minimizes spills.

How often do you do a boil-out?

It is recommended to be done every time you change your oil.

A boil-out should be done at least once a week (or as needed) to remove carbon buildup and maintain fryer efficiency. This helps prevent oil degradation and extends the life of your equipment.

How long does it take to heat up?

Henny Penny open fryers heat up in about 15-20 minutes, depending on oil capacity and fryer type. From idle mode, the oil can be heated to temperature in as fast as 5 minutes.

What is the best temperature for frying?

For every 18°F you reduce your frying temperature, you can effectively double the life of your oil.

What is the recovery time after filtering?

Henny Penny fryers are designed with fast recovery times, meaning they quickly return to optimal cooking temperature after filtering. This ensures minimal downtime and keeps food moving efficiently.

Will I be forced to filter in the middle of a rush?

It all depends on how your fryer is configured and how your kitchen operates. Henny Penny’s SmartFilter® technology allows you to schedule filtration during non-peak hours. Even if filtering is needed mid-rush, the process takes less than 4 minutes, keeping disruption to a minimum.

Why is my fryer not heating properly?

Common issues include:

  • Thermostat issues (may need recalibration or replacement)
  • Clogged burners or heating elements
  • Low gas pressure or electrical issues
  • Dirty oil or lack of filtration causing buildup

How do I clean a Henny Penny fryer?
  • Drain the oil and filter it using the built-in filtration system.
  • Scrub the vat with a fryer-safe cleaner.
  • Perform a weekly boil-out to remove carbon buildup. Takes about an hour.
  • Wipe down exterior surfaces daily to maintain a clean workspace.

Henny Penny’s YouTube channel offers many cleaning, maintenance, and equipment videos.

How often should I replace fryer oil?

With proper filtration and oil management, you can extend oil life up to 7 days or longer.

Signs that oil needs changing include:

  • Darkened colour
  • Excess foaming
  • Smoking at normal frying temperatures

*It is important to test the oil before replacing it! We recommend 3M Oil Quality Test Stripes, which you can compare to the guide to understand your oil. Frontline Systems has a built-in digital oil reader.

What are common fryer safety concerns?
  • Never overfill oil to prevent spills.
  • Never mix water with hot oil (this causes dangerous splattering).
  • Use proper PPE when handling hot oil.
  • Keep a Class K fire extinguisher nearby for oil fires.
  • Needs to be under a fire suppression hood vent system
What are the six enemies of oil?

Extending oil life starts with managing these six key culprits that break it down:

  1. Heat – The higher the temperature, the faster oil degrades. Reducing frying temperature, even slightly, can dramatically extend oil life.
  2. Air – Prolonged exposure to air causes oxidation, breaking down oil quality. Always cover vats when not in use.
  3. Water – Water from frozen foods or cleaning can cause oil to foam, splatter, and degrade faster.
  4. Salt – Salt accelerates oil breakdown and should be added after frying, not over the fryer.
  5. Food Particles – Crumbs left in the oil burn and degrade it quickly. Regular filtering helps remove them.
  6. Detergent – Residue from poor cleaning practices can contaminate oil. Always rinse fryers thoroughly after cleaning.

Pro tip: DSL’s Henny Penny fryers with built-in SmartFilter® systems automatically combat many of these oil enemies, saving you money and keeping food quality high.

How do I choose the right fryer size?

Consider:

  • Menu size & volume (high-demand kitchens may need multiple vats)
  • Oil Capacity (Henny Penny models range from 30-130 lbs per vat)
  • Filtration needs
  • Space & Layout

Our sales team will help you find the right solution for your needs!

Are energy-efficient fryers worth it?

Yes! Henny Penny fryers are designed for lower energy consumption, reduced oil usage, and faster cook times, cutting costs in the long run. Many models also qualify for energy rebates.

What’s the warranty on a Henny Penny open fryer?
  • General warranty is 2 years on parts and labour.
  • Plus a 3 year warranty on the frypot, including parts and labour; after 3 years and up to 7 years, if the frypot fails, the warranty covers only the part replacement.
    • This warranty does not cover any frypot that fails due to any misuse or abuse, such as heating of the frypot without shortening.
